  • 2 tbsp Kahlúa 1+1
  • 25 ml Freshly Brewed Espresso
  • 3 tbsp instant coffee
  • 3 tbsp. brown sugar or honey or more
  • 1 tbsp vodka or more
  • 1 tbsp water
  • 4 meringue nests

To decorate.

  • Cocoa powder to decorate
  • 12 chocolate Coffee Beans
  • 4 tbsp caramel condensed milk optional to replace the coffee or as an addition

Method

  • First, Prepare the coffee foam, in a bowl, using a balloon whisk or a stand mixer, place the instant coffee with sugar, 1tbsp Kahlua, 1 tbsp vodka and water. Whisk for 5 -8 minutes until the mixture foam and create a stable thick foam. This foam will give the strength to the dessert, if needed add extra honey to sweeten it slightly. Keep aside for a few minutes.
  • Then , prepare the cream mixture.
  • In a bowl, combine the mascarpone with the cream, the vanilla bean paste, cold espresso and 1 tbsp Kahlua to bring extra strength if desired and some caramel if desired
  • Crush the meringues in the cream and transfer in the serving cups.
  • Spoon the meringue and cream mixture in serving cups, decorate with extra meringues if desired. Just before serving, spoon over a tablespoon of the strong coffee foam. Remember that this foam is very strong so a little goes a long way!
  • Sprinkle with cocoa powder and some chocolate coffee bean over!
  • Enjoy immediately.
